These banana pancakes are super easy and delicious.

Serves 2

Ingredients:

1 Large Banana
2 eggs
1 Tsp coconut oil
¼ Tsp vanilla extract
¼ Tsp salt

Directions:

Peel the banana and put it into a large bowl.

Mash the banana really well with a potato masher or fork until it is really smooth.

In a second bowl beat the eggs well. Add the eggs to the banana mixture along with the vanilla and salt. Mix well.

Or Put the peeled banana, eggs, vanilla and salt in blender and blend well.

In a small skillet heat the coconut oil.

Once the oil is heated add half of the batter. Cook like you would a normal pancake, flipping it half way through.
