A blend of ground beef and ground lamb lay the foundation for these tasty bites. Then they are packed with fresh oregano, mint and green onion. These would go well in a lettuce wrap with some sliced bell peppers and chopped mint.
1 pound ground beef
1 pound ground lamb
1 yellow onion, grated
3 cloves garlic, minced
1/2 cup gf breadcrumbs
1 egg, beaten
2 tablespoons chopped oregano leaves
2 tablespoons chopped mint leaves
2 green onions, green part cut very thin
1 tablespoon cumin
1 teaspoon cinnamon
zest of one lemon
1 teaspoon salt
1 tablespoon coconut oil
Pre heat oven to 450 degrees F.
In a skillet sauté onion and garlic until translucent, 3 minutes over medium heat.
In a large bowl add the beef, lamb, egg, onion, garlic, oregano, mint, breadcrumbs, green onion, cumin, cinnamon, lemon zest, salt and pepper. Using your fingers mix well but do not over mix.
Form mini meat balls with your hands, you should get 16 meatballs.
Put the meatballs on a sheet tray and place in the oven.
Roast until nice and brown, 15-18 minutes.
