No more standing at the stove babysitting the onions as they go through the lengthy caramelization process! Using a slow cooker, you just put the ingredients in, turn it on and walk away. You will return to perfectly caramelized onions and they retain their liquid so they do not burn.

2 large yellow onions, finely chopped (about 3 cups chopped onions)
2 tablespoons coconut oil
large pinch salt
1 cup mayonnaise
½ cup cashew cream
1 small pinch cayenne pepper
salt to taste
Place onions, oil and pinch of salt into a slow cooker, and stir to coat.
Cook on high for 8 hours, or until onions are deep caramel brown.
Drain any liquid off the onions.
Combine half the onions with remaining ingredients in a small bowl, salt to taste.
Serve with fresh veggies or homemade corn chips.
Freeze the other half of the onions to use for French Onion Soup or to use in other dishes.
