2 Lbs. of Ground Beef
1 Can Fire Roasted Green Chilies
1 Large Carrot
1 Small Yellow onion
1 Tbsp. Cumin
1 Tbsp. Red Chili Powder
1 Tsp. Salt
Fresh Black Pepper
½ bunch Cilantro
1 Egg
Gluten Free Breadcrumbs
1 Tbsp. Coconut Oil
Organic Ketchup
Directions:
Finely chop carrot
Finely chop onion
Add coconut oil to medium sauté pan on medium heat and add carrot and onion.
Set aside to cool
In a large bowl, beat the egg
Chop cilantro
Add to egg and beat together
Add can of chilies and mix together
Add cumin, chili powder, salt and pepper and beat together
Add the meat
Add cooled vegetables and toss together, gently incorporating all ingredients
Start sprinkling in the breadcrumbs starting with ¼ cup and adding more, 1 Tbsp. at a time until it holds together.
Place in a meatloaf or an ovenproof baking dish
Cover the meatloaf with ketchup
Sprinkle the top of the ketchup with chili powder
Bake for 1 hour at 350 degrees
Remove from oven and let cool for 5 minutes before slicing
