This beet and orange salad is delicious. I love the flavor of roasted beets with the bright flavor citrus and the nice crunch of the chopped walnuts. It is actually very easy to make.

1 pound of beets, greens cut off
3 oranges
3 tablespoons olive oil
¼ cup chopped walnuts
pinch of salt

Preheat oven to 400 degrees F

Wash the beets and cut the leaves off.

Place large piece of foil on baking sheet. Put the beets in the middle and add 1 tablespoon of olive oil and 2 tablespoons water. Close the packet and roast one hour.

Juice one orange and put into a large bowl.

Add 2 tablespoons olive oil and a pinch of salt and mix well with a fork.

Segment the other two oranges and cut into pieces and add to the dressing.

Remove the beets from the oven let cool. Then peel and cut into wedges, add to the bowl.

Mix well, plate and sprinkle with chopped walnuts.
